Easy Egg Bake

Make ahead for brunch or cut in 4 servings for healthy breakfast all week!

Warm your oven to 350 degrees.

You will need the following:

  • 9"x12" pan
  • 12 egg white or 2 small boxes of egg beaters
  • ¾ cup salsa
  • 1 cup raw mushrooms
  • 1 cup raw broccoli
  • ½ cup cottage cheese
  • ½ container refrigerator biscuits ( peel into ¼ inch layers and line inside of pan)
    Or ½ package of shredded hash browns
  • 1 tbl. of grated cheese

Place lined pan into oven while it pre-heats to crisp up biscuits or hash browns.  Mix up eggs, salsa and cottage cheese.  Once oven is ready, pull out pan, add egg mix and place veggies on top, sprinkle with grated parmesan cheese and bake 25 minutes or until just slightly firm in center.
